  1. In the Caribbean, there is a bean that they call “pigeon peas”. It is often just shortened to peas in recipes.

  2. My hubby is a huge fan of chicken curry but I personally love it roasted whole, massaged with lemon-garlic butter. Yum!

    • Or… as per James’ answer at the Chefs Table earlier in the week. Do both! Roast it whole, then use the leftovers in a chicken curry the next day!

  3. Chicken in the oven with 1kg of salt around the chicken, cover the chicken with olive oil. Makes the most moist chicken ever and it’s full of flavor!

  4. English man jerks enthusiastically while his friend watches.

On a more serious note, what a simple but great dish, the rice looks delicious with all those flavours!

  5. 3:02 Guys, guys, please. Please do not poke holes into your meat when you jerk it. That’s how you get infections.

  6. Naaaaah! As an ACTUAL JAMAICAN this is NOT! I repeat NOT JERK. You people and your fucking cultural appropriation. Stop it!

    • Taps fan An example by my definition would be best explained by an article I saw in Teen Vogue about the Kardashian /Jenner sisters. “Model Leonie Anderson, has previously addressed Kim Kardashian’s “Boxer Braid” trend to MTV, Sugarscape reported, saying: “The Kim K boxer braids scenario for example, that’s a hair style that’s very traditional to black culture and they’re saying like, ‘Oh, Kim K started this new trend’ and it’s really insulting actually.”

This is why it is cultural appropriation,”None of the Kardashian (or Jenner) sisters( come from a widespread culture) have ever acknowledged the history or significance behind either one of these hairstyles. Cornrows originated in Africa(oppressed culture, smaller*in terms of western world) and have always been a hairstyle predominantly worn by black women(oppressed culture, smaller*in terms of western world). The same can be said about Bantu knots, which black women have been doing to their hair for years”(Teen Vogue).

A simpler way to think about cultural appropriation is like someone stealing your idea ( clothes, music etc), making it popular and making millions of dollars in the process and not giving you any credit or acknowledgement. No one likes that and it’s offensive to the person who created it. It’s the same reason why people and/or companies get rights and/ or patients for there ideas or work, so that it doesn’t happen to them.

  7. It’s called peas because in Jamaica we call kidney beans red peas. So if u show a Jamaican some kidney beans and asked them to tell you what it is, they would say Red Peas. Hope this helped 🙂

    • tekubus so I’m guessing you don’t eat, peanut butter, or potato chips.. you know since as they were invented by ‘niggers’

  8. In my opinion, the best chicken has to be french style roasted chicken with rosemary roasted baby potatoes, served with a lovely apple compote (for the twist) ..
